This Plantain Nut Bread is inspired by Shelley Albeluhn’s Banana Banana Bread on allrecipes.com. It is a very dense bread. This makes two 5″ x 9″ loaves.
- 3 cups bread flour
- 1/2 tablespoon baking soda
- scant 1/2 teaspoon salt
- 3/4 cup butter
- 1 cup brown sugar
- 3 eggs, beaten
- 3 1/2 cups mashed yellow to black plantains
- 2 1/2 cups chopped walnuts and pecans
Assembly:
- Prepare two 5″ X 9″ loaf pans by spraying with butter flavored PAM, followed by a dusting of flour. Preheat the oven to 350 degrees Fahrenheit.
- Mix the first three dry ingredients in a large bowl.
- Melt the butter in a glass bowl. Add the brown sugar, and and mix well. Mix in the eggs and mashed plantains. stir in the nuts.
- Divide into the two loaf pans.
- Bake for 1 hour and 10 minutes. Cool briefly in the pan. Turn out onto the cutting board when possible.
- Serve warm, cold, or toasted.
Makes 2 x 2 lb loaves. A little over 4 lbs total
